Foodie Fridays - Strawberry Compote
If you have read our Testing Tuesdays blog this week you will know that we promised the recipe to make Strawberry Compote.
So here it is. This recipe makes a really versatile compote - think stewed strawberries or unset jam - which can be used in so many ways. We have used it...
with or as a filling in sponge cake (see photo)
mixed into yoghurt (but watch the carbs from the yoghurt!)
as a topping on strawberry fluff (see photo - the recipe is in our cookbook)
on chaffles (keto waffles) with whipped cream
etc.
The recipe is really easy, quick to make and gives a great result...
Slice 6 strawberries (about 100g) into chunks and add to a pan
Add a squeeze of lemon
Add a teaspoon of sweetener
Heat over a low heat, stirring regularly
Once some juice has come out of the strawberries you can turn the heat up, keep stirring and continue until a lot of juice has come out of the strawberries and the strawberries have started to breakdown, but you still have some lumps of strawberry left in the pan
Allow to cool and then use.
Once made this will keep in the fridge, in an air tight container, for a couple of days.
This recipe is around 6g of carbs in total - and should be enough for 4-6 servings - so 1-1½g per serving, depending on how much you use.
The recipe also works brilliantly with raspberries and other fruit berries - so let your imagination go wild!
