Foodie Fridays - Buffalo Chicken Bake/Dip
We are always on the look out for new recipes that we can make a keto version of. Especially recipes which include some of our favourite ingredients.
We'll admit some recipes just can't be made keto, whilst others, well you can take the carbs out but they just don't taste good!
That's not the case with this recipe!!
This is something I'd seen and wanted to have a go at a keto version ..... and it tastes so good.
We served it with some keto bread to tear and dip into the buffalo chicken, but you could serve this almost as a cheesy casserole with a vegetable on the side.
So here's the recipe for Buffalo Chicken Bake
Either roast two chicken breasts or buy a cooked rotisserie chicken from your supermarket. Let it cool a bit so that it is still warm and shred the two breasts into small strips. Put to one side.
In a large mixing bowl add 150g cream cheese (this recipe is easier to make if you let the cheese warm to room temperature)
To the cheese add 120ml of soured cream, 100g mayonnaise, 1 tsp garlic powder, 1 tsp oregano and 40ml of Franks Hot Buffalo sauce. Feel free to add any other herbs you really like. Mix well with a whisk until you end up with a smooth sauce.
At this point you can taste-test the sauce ...... if you prefer more heat add more Franks sauce.
Once you are happy with the sauce add the shredded chicken to the sauce and mix together well and place into a low baking dish (see our photos, I would go for a low wide dish, rather than a deep dish)
Smooth the top of the chicken and sauce mix and add 100g grated cheese on the top. We use Mexican/Mexicana Cheese we get from our supermarket but cheddar cheese would be fine.
Finish by shaking some drops of Franks sauce on top.
Cook in an oven at 190'C for 20/25 minutes. Everything is already cooked so you want to heat the bake/dip up and melt the cheese so the top is bubbling around the edges.
We serve this family style, in the middle of the table with some keto bread, celery and small gem lettuce leaves to dip in.
This recipe is for 2 hearty appetites, and works out at around 7.5g carbs (plus whatever you serve with it) and 580cals each.
We love this dish, great for when you have friends round as they'll never know they are eating keto! One word of warning (from experience) it can be really, really hot when straight out of the oven!!
